His love of cooking started young from busman & dishwasher at the Golden Bear to manager where he won Best Plate Presentation award. He also puts his artistic talents into carving ice sculptures. His restaurant and business experience has taken him as far as the East Coast, where he managed restaurant & hotel chains. But family and the love of cooking has always brought him back to Michigan City. When Paul isn’t cooking the delicious cuisine at Matey’s you may find him on the golf course, which is another one of Paul’s passions. Whether its seafood or golf you know you’re in for a great experience.
Captain Bill
Many, many years ago, Captain Bill Bailey set his sites on a cozy little inlet along Lake Michigan and decided to bring a touch of the Florida Keys and its laid back lifestyle to the shores of the Indiana dunes. His quest, to deliver great food in generous portions that wouldn't undue a pirate’s purse! Captain Bill’s motto, “You’ll never go hungry while I’m at the helm.” Sporting events would be required for this once in a lifetime experience! “...To be had by all, let there be sports, live entertainment and the great outdoors!” he exclaimed. And so, Matey’s was born. An Irishman at heart, the seafood would be the best around, and Captain Bill, commanding a full crew, whipping up a bounty that would put any fish wife to shame, and relaxing whenever the sun dipped low in the horizon would be found, with his first mate, Red, enjoying a Bahama breeze, and the breeze from the deck whenever warm winds blew across his beloved Matey’s!
